Vanilla rolls

Vanilla rolls are baked at Christmas in almost every family and if there was a poll about the most popular type of Christmas pastry, vanilla rolls would definitely win. They are the ones who go secretly in boxes, where they are given to rest at least 14 days before the holidays and sometimes eaten before the first candle on the tree is lit.

Procedure:

Sift the flour, add sugar, nuts, slightly loosened butter, egg yolks and lemon peel and quickly knead into a smooth and compact dough. We wrap it in foil and let it, preferably overnight, rest in the fridge.
Then we always take a part from it, roll it out on rollers with a diameter of about 1 cm, from which we cut off equally large pieces. Fold them slightly into the shape of rolls and bake on a baking tray covered with baking paper at 150 ° C for about 10 minutes until they turn pink. Make sure that there are rolls of the same size and thickness on the baking sheet.

Then remove the rolls from the oven, let them rest for about 2 minutes and then coat the still hot in powdered sugar, into which we have mixed vanilla sugar with real vanilla. Rolls need a few days to rest, so bake them as one of the first species.

100 g ground walnut kernels
200 g butter
2 pieces of egg yolk
lemon peel
2 packets of vanilla sugar
powdered sugar for coating
